Preheat your oven to 425°F (220°C). Wash and scrub the russet potatoes, then cut them into quarters or wedges.

In a large bowl, toss the potato wedges with olive oil, salt, black pepper, and garlic powder until evenly coated.

Spread the seasoned potato wedges in a single layer on a baking sheet. Bake in the preheated oven for 30-35 minutes, or until golden brown and crispy, flipping halfway through.

Make the Aioli

In a small bowl, combine mayonnaise, steak sauce, lemon juice, and minced garlic. Mix well until smooth. Adjust seasoning to taste.

Herb Salad

Prepare the Herb Salad

In another bowl, combine the chopped parsley, chives, and dill. Drizzle with olive oil and lemon juice, then season with salt and black pepper. Toss gently to combine.

Assemble the Dish

Once the potatoes are done baking, remove them from the oven. Serve the crispy potatoes topped with crumbled bleu cheese, a side of steak sauce aioli, and a generous portion of herb salad.
