Preparation of Tots

Cook the Tater Tots

Preheat your oven to 220°C (425°F). Spread the frozen tater tots in a single layer on a baking sheet. Drizzle with vegetable oil and toss to coat. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.

Prepare the Mole Sauce

Remove the stems and seeds from the dried ancho chiles. Soak them in hot water for about 15 minutes until softened. Drain and set aside.

Sauté Aromatics

In a medium saucepan, heat a tablespoon of oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent, about 5 minutes.

Blend Ingredients

Add the soaked chiles, canned tomatoes, broth, cumin, cinnamon, brown sugar, and salt to the saucepan. Blend until smooth using an immersion blender or transfer to a regular blender. Return to heat and simmer for 10 minutes, stirring occasionally.

Final Assembly

Serve the Tots

Once the tater tots are cooked and crispy, remove from the oven. Place a generous amount of mole sauce over the tots. Top with crumbled cotija cheese, pepitas, and pickled red onion.
