Prepare the Jalapeno

Slice the jalapeno in half, remove the seeds for a milder flavor, and chop it into small pieces.

Juice the Lime

Cut the lime in half and juice it using a citrus juicer or by hand. Set aside the juice.

Prepare the Pineapple

If using fresh pineapple, cut it into small chunks. If using canned pineapple, drain it well.

Muddle the Mint and Jalapeno

In a cocktail shaker, add the chopped jalapeno and mint leaves. Use a muddler or the back of a spoon to gently bruise the mint and jalapeno to release their flavors.

Combine Ingredients

Add the Bacardi Rum, lime juice, and simple syrup to the cocktail shaker with the muddled mint and jalapeno.

Fill the shaker with ice and shake vigorously for about 15 seconds until well chilled.

Strain the mixture into a glass filled with ice to keep it cold.
