Warm the glass

Preheat an Irish coffee or heatproof tumbler by filling it with hot water for 30 seconds, then discard the water. This keeps the drink warm longer.

Dissolve sugar

Add the brown sugar to the warmed glass.

Combine Tuaca and coffee

Pour 2 oz Tuaca into the glass, add the optional 0.5 oz dark rum if using. Pour 6 oz freshly brewed hot coffee into the glass over the liqueur and sugar. Stir gently until the sugar is fully dissolved (about 10–15 seconds).

Taste and adjust

Taste carefully (it will be hot). Adjust sweetness with a touch more sugar if desired or add a splash more Tuaca for extra vanilla-citrus character.

Make quick whipped cream

In a small chilled bowl, combine 3 tbsp cold heavy cream, 1 tsp powdered sugar, and 1 tsp vanilla extract. Whip by hand with a small whisk or use a handheld electric frother until soft peaks form — it should be light, slightly billowy, and spoonable (about 45–60 seconds by hand or 15–20 seconds with a frother). Do not over-whip.

Top the coffee

Gently spoon or pipe the whipped cream over the back of a spoon onto the surface of the hot coffee to form a floating layer about 1/2 inch thick. This creates the classic contrast between hot coffee and cool cream.

Garnish

Sprinkle a pinch of freshly ground espresso or coffee beans over the whipped cream, and optionally grate 1 tsp dark chocolate or dust lightly with cocoa powder. Add the cinnamon stick as a stirrer if desired.

Serve

Serve immediately while the coffee is hot and the whipped cream remains chilled. Provide a small spoon or leave the cinnamon stick for stirring as desired.
