Steep
Bring 2 cups water to a gentle simmer. Remove from heat, add 2 tablespoons butterfly-pea flowers, cover and steep for 8–10 minutes until the water turns deep blue-violet.
Strain the flowers through a fine mesh sieve or cheesecloth into a heatproof container. Press gently to extract liquid. Let cool to room temperature, then chill in the refrigerator for at least 15 minutes.
Lemon soda simple syrup
Make syrup
Combine 1 cup sugar and 1 cup water in a small saucepan over medium heat. Stir until the sugar dissolves and the mixture reaches a gentle simmer. Simmer 2 minutes, then remove from heat.
Stir in 1 tablespoon fresh lemon juice and 1 teaspoon lemon zest. Cool to room temperature. Transfer to a jar and chill; syrup can be stored refrigerated for up to 2 weeks.
Assembly & serving
Prepare a glass: add about 1/2 cup ice to a tall glass (adjust for size). Pour 1 tablespoon chilled lemon soda simple syrup into the glass, then add 1 tablespoon fresh lemon juice.
Top with 10 oz chilled club soda, pouring slowly to preserve the layered effect. Give a gentle stir if you want a uniform color, or leave layered for visual effect.
Garnish with a lemon wheel and an edible flower or a sprig of mint. Serve immediately.
