Make quick simple syrup

Combine 3 tablespoons granulated sugar and 1/2 cup of the cold water in a small saucepan. Warm gently over medium-low heat just until the sugar dissolves, stirring constantly. Do not boil. Remove from heat and let cool to room temperature (about 10 minutes).

Prepare peach purée

Place 2 cups peeled, pitted peach flesh in a blender with the remaining 1/2 cup cold water and 120 ml peach nectar (if using). Blend until very smooth, about 30–45 seconds. If you prefer a clearer lemonade, strain the purée through a fine-mesh sieve into a bowl, pressing to extract as much juice as possible. You should get roughly 1 to 1.5 cups of peach purée/juice.

Juice the lemons

Roll 6 lemons on the counter to loosen juice, halve and juice them to yield approximately 3/4 to 1 cup fresh lemon juice (adjust to taste). Remove any seeds.

Combine lemonade base

In a large pitcher, combine the cooled simple syrup, fresh lemon juice, and strained peach purée. Stir thoroughly to combine. Taste and adjust sweetness or acidity: add up to 1 more tablespoon sugar (dissolved into a teaspoon of warm water) if sweeter, or a splash more lemon juice if brighter.

Chill with ice

Add 4 cups of ice to the pitcher to cool the mixture quickly, then let it sit 5 minutes so it chills evenly. Do not over-dilute — if you prefer, chill the base in the refrigerator for 30 minutes before adding ice/fizz.

Prepare pepper spice

Lightly toast 1 teaspoon freshly ground black pepper in a dry small skillet over low heat for 20–30 seconds to bloom the aroma. Let cool. This step is optional but intensifies the pepper flavor without adding heat.

Assemble the sparkling lemonade

Remove excess ice if the pitcher is overly full. Pour 600 ml chilled ginger beer and 300 ml chilled club soda into the peach-lemon base in the pitcher. Stir gently to combine so you do not lose all carbonation.

Finish with pepper

Sprinkle the toasted ground black pepper into the pitcher and stir gently once to distribute. Taste and add more in small increments if you want a stronger pepper note—the Devil’s Foot character should be noticeable but not overpowering.

Optional alcohol

If making cocktails, add 90 ml vodka or bourbon to the entire pitcher (this yields about 6 servings with alcohol). Stir gently to incorporate.

Garnish & Serve

Rim and prepare glasses: If using, dip each glass rim in water or lemon juice then into coarse sugar or chili-salt for a sweet or spicy rim.

Fill each glass halfway with ice. Pour the Devil's Foot Sparkling Peach Lemonade over the ice, leaving room for garnish. For a single 12-oz serving, use about 200 ml of the mixed beverage.

Garnish each glass with a peach slice, a lemon wheel, and a sprig of mint. Optionally dust a tiny pinch of freshly ground black pepper on top of the foam or onto the peach slice for aroma.

Serve immediately while fizzy. Leftovers: keep chilled in the refrigerator (without ice) and add fizz (ginger beer/club soda) just before serving. Consume within 24 hours for best texture and flavor.
