Method

Prep the glass
Run a lime wedge around the rim of a highball or rocks glass. Dip the rim into coarse salt or Tajín to coat. Set glass aside.
Build the Paloma
Fill the prepared glass with ice. In a shaker or mixing glass combine 2 oz Cazadores tequila, 1.5 oz fresh grapefruit juice, 0.5 oz fresh lime juice and 0.5 oz simple syrup (or agave). Stir briefly to combine (or give 6–8 gentle shakes if using a shaker).
Adjust sweetness or fizz
Taste and add up to 0.25–0.5 oz extra simple syrup or agave if you prefer sweeter, or more grapefruit soda (an extra 1–2 oz) if you want a lighter, fizzier drink.

Prep spicy elements
If using a jalapeño slice, muddle the slice gently in the shaker with the lime juice to release heat (remove seeds to reduce spice). If using a canned spicy mixer, plan to use it in place of or in addition to simple syrup.
Build the spicy margarita
In a shaker with ice combine 2 oz Cazadores tequila, 1 oz fresh lime juice (instead of 0.5 oz), 0.5 oz orange liqueur (optional), 0.25–0.5 oz agave or simple syrup and the muddled jalapeño or 1 piece of canned spicy mixer. Shake vigorously 8–12 seconds until chilled.
