Method

Rosemary Simple Syrup (prepare ahead)

Combine

In a small saucepan, combine 1 cup water and 1 cup granulated sugar.

Heat

Place over medium heat and stir until the sugar fully dissolves and the mixture comes just to a simmer (do not boil vigorously), about 3–5 minutes.

Infuse

Remove from heat, add 3 fresh rosemary sprigs to the hot syrup, and let steep for 20–30 minutes depending on how assertive you want the rosemary flavor (longer = stronger).

Strain & Cool

Strain out the rosemary, transfer the syrup to a clean jar, cool to room temperature, then refrigerate. Syrup will keep in the refrigerator for up to 2 weeks.

Chill Glass

If desired, chill a highball or Collins glass by filling it with ice water while you prepare the drink, then discard the water before assembling.

Measure & Build

Fill the glass with fresh ice (about 1 cup). Pour in 3 oz fresh grapefruit juice and 0.75 oz rosemary simple syrup.

Top with Soda

Gently top the mixture with 2 oz soda water. Stir once briefly (1–2 gentle stirs) to combine without flattening the carbonation.

Garnish

Garnish with a fresh grapefruit wedge on the rim and a sprig of rosemary. For extra aroma, slap the rosemary sprig between your palms to release oils before placing it in the glass.

Serve

Serve immediately while cold and effervescent. Adjust sweetness by adding more or less syrup to taste (±0.25 oz).
