Method
Mint-Lime Syrup
Make simple syrup with mint and lime
Combine 1 cup water and 1 cup granulated sugar in a small saucepan over medium heat. Stir until the sugar fully dissolves and the mixture comes just to a simmer (do not boil vigorously).
Remove the pan from heat. Add 1 packed cup of fresh mint leaves and 1 tablespoon fresh lime zest to the hot syrup. Stir to submerge the mint and zest, then let steep for 15–20 minutes to infuse.
After steeping, add 2 tablespoons fresh lime juice to the syrup and stir. Strain the syrup through a fine mesh sieve into a clean jar, pressing on the solids to extract flavor. Discard solids. Let cool to room temperature, then refrigerate. Yields roughly 10–12 ounces (use 0.75 oz per cocktail).
Assemble Mojito (per serving)
Muddle mint and syrup
Place 6 fresh mint leaves in the bottom of a highball glass or sturdy mixing glass. Add 0.75 oz (about 3/4 oz) of the chilled mint-lime syrup and 0.5 oz fresh lime juice. Using a muddler or the back of a spoon, gently press and twist the mint leaves 4–6 times to release essential oils — avoid shredding the leaves into small bits.
Top with soda and stir
Pour 3 oz club soda over the ice. Using a long spoon, gently stir 6–8 times from bottom to top to combine syrup, rum, and soda without bruising the mint further.
Garnish and serve
Slap a small mint sprig between your palms to wake up the aroma and place it on top as a garnish along with a lime wedge. Serve with a straw and enjoy immediately.
