Main Course Preparation
Prepare the Beef Tenderloin
Preheat your oven to 400°F (200°C). Rub the beef tenderloin with olive oil, salt, and black pepper. Insert garlic cloves and rosemary into slits along the beef. Place the beef on a roasting pan.
Roast the Beef
Roast the beef in the preheated oven for about 25-30 minutes for medium-rare, or until it reaches your desired doneness. Use a meat thermometer to check the internal temperature.
Rest the Beef
Remove the beef from the oven and let it rest for 10-15 minutes before slicing. This helps retain the juices.
Sides Preparation
Prepare the Asparagus
While the beef is roasting, trim the ends of the asparagus. In a large skillet, melt butter over medium heat. Add asparagus and sauté for 5-7 minutes until tender.
Season the Asparagus
Add lemon juice, salt, and black pepper to the asparagus. Toss to coat and cook for an additional minute.
Dessert Preparation
Make the Chocolate Ganache
In a saucepan, heat heavy cream until it just begins to simmer. Remove from heat and add dark chocolate and butter. Stir until smooth and combined.
Finish the Ganache
Add sugar and vanilla extract to the chocolate mixture, stirring until fully incorporated. Let it cool slightly before serving.
