Prepare Glass
Rim the glass
Run the lime wedge around the rim of a rocks glass (or coupe). Pour the coarse sea salt onto a small plate and gently press the rim into the salt to create a thin salted edge. Set the glass aside.
Mix Cocktail
Measure and combine
Add 2 oz mezcal, 0.75 oz fresh lime juice, 0.5 oz agave syrup, 0.5 oz orange liqueur, and 2 dashes of smoked chili or mole bitters (if using) into a cocktail shaker or mixing glass.
Add ice and shake or stir
If you want a slightly diluted, colder drink with aeration, add a generous handful of ice (about 1 cup) to the shaker and shake vigorously for 10–12 seconds. For a smoother, silkier texture and less dilution, add ice and stir in a mixing glass for 20–30 seconds.
Strain
Using a strainer, double-strain into the prepared rocks glass over one large ice cube or a few fresh ice cubes to minimize dilution and keep the drink cold.
Finish & Garnish
Express the oils of a charred orange peel over the cocktail by holding the peel skin-side down above the drink and giving it a firm twist, then drop it in (optional). Alternatively, float a thin slice of fresh jalapeño on top for a subtle heat.
Garnish with the lime wheel or wedge on the rim. Serve immediately.
