Prepare the Calamari

Clean the Calamari

Rinse the fresh calamari under cold water. Remove the head and the innards. Cut the body into rings that are about 1/2 inch thick. Set aside.

Make the Buttermilk Marinade

In a bowl, pour the buttermilk over the calamari rings. Let them marinate for at least 30 minutes in the refrigerator to tenderize.

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well to ensure an even distribution of spices.

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Remove the calamari from the buttermilk and allow any excess to drip off. Dredge the rings in the flour mixture, ensuring they are fully coated.
