Measure and combine

Add 1.5 oz amaretto, 0.5 oz Jim Beam bourbon, 1 oz fresh lemon juice, 0.5 oz aquafaba, 0.25 oz Luxardo cherry syrup, and 0.25 oz simple syrup (if using) into a cocktail shaker.

Dry shake

Seal the shaker and shake vigorously without ice for 15–20 seconds to emulsify the aquafaba and create a silky, frothy head.

Wet shake

Open the shaker, add 6 ice cubes, reseal, and shake hard for 10–15 seconds until the shaker is cold to the touch and well-chilled.

Serve

Strain

Double-strain the cocktail into a rocks glass over one large ice cube using a Hawthorne strainer and a fine-mesh (optional) strainer to remove ice shards and achieve a smooth foam.

Garnish and finish

Float a Luxardo cherry on top of the foam and optionally express a lemon twist over the drink, brushing the rim with the oils before dropping the twist in. If you prefer a sweeter drink, stir in an additional 0.25 oz simple syrup before serving.

Aquafaba substitute: If you do not have aquafaba, you can omit it (the drink will be less frothy) or use a fresh egg white (approx. 0.5 oz). When using egg white, ensure proper hygiene and warn guests of raw egg. Adjust sweetness to taste; Luxardo cherry syrup is sweet and intense, so additional simple syrup is optional.
