Prepare the Gazpacho

In a blender, combine cucumber, green bell pepper, green onions, parsley, garlic, lemon juice, olive oil, vegetable broth, salt, and black pepper. Blend until smooth.

Transfer the gazpacho to a large bowl or pitcher and refrigerate for at least 1 hour to allow the flavors to meld.
