Prepare the Remoulade

In a bowl, combine mayonnaise, horseradish, Dijon mustard, and chopped fresh herbs. Mix well and refrigerate until ready to use.

Prepare the Fennel

Trim the fennel bulb and slice it thinly. Heat olive oil in a grill pan over medium-high heat and char the fennel slices until tender and slightly caramelized, about 4-5 minutes. Season with salt and pepper.

Assemble the Salad

Slice the heirloom tomatoes into wedges. On a serving platter, arrange the tomato wedges, charred fennel, and pickled beets. Drizzle with olive oil and season with salt and pepper.

Serve the salad with the prepared remoulade on the side and accompany it with slices of cornbread.
