Preparation Steps

Prepare the Beef Tartare

In a bowl, combine the finely chopped beef tenderloin, egg yolk, chopped capers, Dijon mustard, and Worcestershire sauce. Mix gently until well combined.

Prepare the Black Bean Puree

If not already prepared, blend cooked black beans until smooth, adding a little water if necessary to achieve a creamy consistency.

Prepare the Succotash

In a pan, lightly sauté corn and lima beans until heated through. Season with salt and pepper to taste.

Assemble the Dish

On a serving plate, spread a layer of black bean puree. Form the beef tartare mixture into a small mound on top of the puree. Arrange the succotash beside the tartare.

Add Finishing Touches

Drizzle poblano crema and house hot sauce over the tartare. Sprinkle with corn nuts and chopped cilantro for garnish.

Serve with grilled bread on the side for dipping.
