Preparation

Take the filet mignon steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps them cook evenly.

Seasoning

Pat the steaks dry with paper towels. Season both sides generously with salt and black pepper.

Searing

In a large skillet, heat olive oil over medium-high heat. Once hot, add the filet mignon steaks. Sear for about 4-5 minutes on each side for medium-rare, adjusting time to your desired doneness.

Basting

During the last minute of cooking, add butter and the sprig of rosemary or thyme to the skillet. Spoon the melted butter over the steaks to enhance flavor.

Remove the steaks from the skillet and let them rest on a plate for about 5 minutes before serving to allow the juices to redistribute.
