Make the Base

In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, and salt over medium heat. Stir until the sugar is dissolved and the mixture is warm, but not boiling.

Whisk the Egg Yolks

In a separate bowl, whisk the egg yolks until they are pale and thick. Gradually pour some of the warm cream mixture into the egg yolks while whisking constantly to temper them.

Combine and Cook

Pour the tempered egg yolk mixture back into the saucepan with the remaining cream mixture. Cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon. This should take about 5-7 minutes.

Chill the Mixture

Remove the saucepan from heat and stir in the vanilla extract. Pour the mixture into a bowl, cover with plastic wrap, and refrigerate for at least 4 hours or until completely chilled.

Churn the Ice Cream

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze

Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.
