Prepare the Steak

Remove the porterhouse steak from the refrigerator and let it sit at room temperature for about 30 minutes. This helps the steak cook evenly.

Season the Steak

Pat the steak dry with paper towels. Rub both sides with olive oil, then season generously with kosher salt and black pepper.

Heat the Grill or Pan

Preheat your grill or cast-iron skillet over high heat until it’s very hot.

Cook the Steak

Place the steak on the grill or skillet. For medium-rare, cook for about 4-5 minutes on each side, or until the internal temperature reaches 130°F (54°C).

Add Aromatics

During the last couple of minutes of cooking, add the garlic cloves and rosemary to the pan. Add butter and baste the steak with the melted butter for added flavor.

Rest the Steak

Once cooked to your liking, transfer the steak to a cutting board and let it rest for 10 minutes before slicing. This allows the juices to redistribute.
