1. Prepare the beef base

In a chilled mixing bowl, combine 300 g finely minced beef with 1 tsp fine sea salt, 0.5 tsp freshly ground black pepper, and 1 tsp Dijon mustard. Mix gently until just combined; avoid overworking the meat.

2. Add aromatics

Stir in 1 tsp capers (minced), 2 tbsp cornichons (finely chopped), and 1 shallot (finely minced).

3. Emulsify and brighten

Drizzle in 1 tbsp extra-virgin olive oil and 1 tsp lemon juice. Sprinkle 0.25 tsp sumac. Mix to incorporate.

4. Fold in herbs

Fold in 2 tbsp chopped fresh parsley and 2 tbsp chopped fresh mint. Taste and adjust with a touch more salt if needed.

5. Plate and garnish

Divide the tartare onto the 6 toasted bread slices. Garnish with 1 tbsp pomegranate seeds.
