Prepare the marinade

In a small bowl, whisk together the extra virgin olive oil, lemon juice, minced garlic, chopped parsley and dill. Season with kosher salt and fresh black pepper. Set aside to let flavors mingle.

Prep vegetables and cheese

Slice cucumber into thin ribbons, halve cherry tomatoes, quarter artichoke hearts, slice roasted red peppers, and prepare olives and capers. Have feta cubes and mozzarella pearls ready.

Marinate the vegetables

In a large mixing bowl, combine cucumber ribbons, cherry tomatoes, artichoke hearts, roasted peppers, olives, and capers. Pour about half of the prepared marinade over the mixture and toss to coat. Let marinate for 15–20 minutes, tossing halfway.

Marinate the cheese

In a separate small bowl, lightly toss feta cubes (and mozzarella pearls if using) with a tablespoon of the marinade and a pinch of chopped herbs. Allow to sit for 5 minutes to absorb flavors.

Assemble the platter

Spread the marinated vegetables on a large serving board. Arrange the marinated feta (and mozzarella if using) on top. Drizzle any remaining marinade over the arrangement and sprinkle with additional fresh parsley and dill.

Serve

Offer toothpicks or small forks for easy picking. Provide extra lemon wedges on the side for a bright finishing note.
