Prep scallops

Pat scallops dry with paper towels; remove the slender side muscle if present to ensure crisp sear.

Season scallops

Season both sides of each scallop with sea salt and freshly ground black pepper.

Heat skillet

Place a heavy skillet over high heat and add the neutral oil; allow it to shimmer.

Sear scallops

Add scallops in a single layer; sear without moving for 1.5–2 minutes until a deep golden crust forms.

Baste and finish

Flip scallops; add the butter and baste for 1–2 minutes until just opaque. Remove from heat if they overcook.

Vanilla dust

Sprinkle a light dusting of vanilla powder on the top of each scallop (about 1/4 tsp per 6 scallops) to bloom aroma in the heat.

Plate and garnish

Arrange scallops on plates; drizzle a few drops of lemon juice, sprinkle lemon zest, and garnish with microgreens.
