Method
Preparing the Filet Mignon
Preheat the Oven
Preheat your oven to 400°F (200°C) for cooking the filet mignon.
Season the Steaks
Rub the filet mignon steaks with olive oil, salt, and black pepper on both sides. Sprinkle chopped fresh rosemary and minced garlic cloves over the steaks, pressing gently to adhere.
Sear the Steaks
Heat a cast-iron skillet over medium-high heat. Once hot, add the seasoned steaks and sear for 3-4 minutes on each side until a golden-brown crust forms.
Finish in the Oven
Transfer the skillet to the preheated oven and cook for an additional 5-7 minutes for medium-rare, or until your desired doneness is reached. Remove from the oven and let rest for 5 minutes.
Preparing the Rosemary & Garlic Fries
Prepare the Potatoes
Wash and cut the russet potatoes into thin strips (about 1/4 inch thick) to create fries.
Season the Fries
In a large bowl, toss the potato strips with olive oil, chopped fresh rosemary, garlic powder, salt, and black pepper until evenly coated.
Bake the Fries
Spread the seasoned potato strips in a single layer on a baking sheet. Bake in the same preheated oven as the steaks for about 25-30 minutes, flipping halfway through, until golden brown and crispy.
