Clean the Mussels

Rinse the mussels under cold running water to remove any sand or debris. Discard any mussels that are open and do not close when tapped.

Prepare the Pancetta and Garlic

Dice the pancetta into small pieces and mince the garlic cloves.

Cook Pancetta and Garlic

In a large pot, heat the olive oil over medium heat. Add the diced pancetta and cook until crispy, about 3-5 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Add Wine and Mussels

Pour in the dry white wine and bring to a simmer. Add the cleaned mussels to the pot, and stir to combine with the pancetta and garlic.

Steam the Mussels

Cover the pot with a lid and steam the mussels for about 5-7 minutes, or until all mussels have opened. Discard any mussels that remain closed.

Season and Garnish

Season with salt and black pepper to taste. Sprinkle with fresh parsley before serving.
