Method

Preparing the Bone Marrow

1

Roasting the Bones

Preheat your oven to 450°F (232°C). Place the beef marrow bones upright in a roasting pan, ensuring they are stable.

2

Sprinkle the sea salt and black pepper evenly over the top of the bones.

3

Add fresh thyme on top of the bones for added flavor.

4

Roast the bones in the preheated oven for 15-20 minutes, or until the marrow is bubbling and has started to slightly brown.

Making the Brûlée Topping

5

Preparing the Sugar Mix

In a small bowl, combine the demerara sugar and softened butter, mixing until it forms a paste.

6

Once the marrow has roasted, remove the bones from the oven and carefully spoon the sugar mixture on top of the marrow.

Brûléeing the Topping

7

Caramelizing the Sugar

Using a kitchen torch, carefully caramelize the sugar topping until it is golden brown and bubbly. If you do not have a torch, you can place the bones under a broiler for 1-2 minutes to achieve the same effect.

Serving the Dish

8

Final Touches

Finely chop the fresh parsley and sprinkle it over the brûléed marrow for garnish.

9

Serve the bone marrow brûlée with lemon wedges on the side for a refreshing contrast.
