Prepare Oysters

Shucking the Oysters

Using an oyster knife, carefully shuck each oyster by inserting the knife into the hinge and twisting to open it. Remove the top shell and let the oyster slide into a serving platter. Be careful to keep the oyster's liquor.

Make Mignonette Sauce

Combine Ingredients

In a small bowl, mix together the red wine vinegar, finely chopped shallots, and freshly cracked black pepper. Set aside to let the flavors meld while you prepare the cocktail sauce.

Make Cocktail Sauce

Mix Sauce

In another bowl, combine the ketchup, prepared horseradish, freshly squeezed lemon juice, Worcestershire sauce, and season with salt and freshly cracked black pepper to taste. Stir well to combine.

Serve

Present the Dish

Arrange the shucked oysters on the platter, served on ice if desired. Serve with small bowls of mignonette sauce and cocktail sauce on the side. Garnish with lemon wedges.
