Method
Strawberry Puree
Prepare Puree
Wash and hull the strawberries. Place 1 cup hulled strawberries, 1 tablespoon granulated sugar, and 1 teaspoon fresh lemon juice in a blender or food processor. Blend on high until smooth, about 20–30 seconds.
Taste the puree. If it is too thick to pour easily, add up to 1 teaspoon cold water and pulse once more. Adjust sweetness by adding a little more sugar if necessary. Strain the puree through a fine-mesh sieve into a small bowl to remove seeds for a silky texture (optional). Chill until ready to use.
Cocktail
Assemble the Sparkler (single large format: serves 4)
Place serving glasses in the refrigerator to chill for 5–10 minutes or fill with ice to chill briefly then discard ice. Add 3 tablespoons strawberry puree to each chilled wine glass (or, for a pitcher, combine 12 tablespoons puree in the bottom).
Add Limoncello
Pour 15 ml (1 tablespoon) Il Tramonto Limoncello into each glass over the puree (or 60 ml into the pitcher). Gently stir to combine the puree and limoncello so the flavors marry but keep some texture.
Finish and Serve
If you like a slightly lighter drink, top each glass with about 15 ml (1 tablespoon) chilled club soda. Add ice to the glass if you prefer (optional). Garnish each glass with 2 fresh strawberry slices and a lemon twist or wheel. Serve immediately so the sparkling wine stays effervescent.
