Prepare the Meatball Mixture

In a large mixing bowl, combine ground beef, breadcrumbs, grated Parmesan cheese, egg, minced garlic, chopped parsley, salt, and black pepper. Mix until well combined.

Form the Meatballs

Preheat your oven to 400°F (200°C). Using your hands, form the mixture into meatballs, about 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.

Bake the Meatballs

Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through and browned on the outside.

Roast the Peppers

While the meatballs are baking, preheat a grill or oven broiler. Brush the whole red bell peppers with olive oil and sprinkle with salt. Roast the peppers until the skin is charred and blistered, turning occasionally. This should take about 15-20 minutes.

Peel and Slice the Peppers

Once roasted, place the peppers in a bowl and cover it with plastic wrap for about 10 minutes. This will help loosen the skin. Afterward, peel off the charred skin, remove the seeds, and slice the peppers into strips.

Prepare the Garlic Oil

In a small saucepan, combine olive oil and minced garlic. Heat over low heat until the garlic is fragrant and lightly golden, about 5-7 minutes. Be careful not to burn the garlic. Remove from heat and let it cool slightly.

Assemble the Hero

Slice the sub rolls in half lengthwise. Place 2-3 meatballs on each roll, top with roasted red pepper strips, and drizzle with garlic oil. Garnish with fresh basil leaves. Serve immediately.
