Prepare Chai concentrate (if making from scratch)

Brew a strong chai by steeping 2 roomy black tea bags or 2 tablespoons loose black tea with 1 cinnamon stick, 3 crushed green cardamom pods, 3 crushed cloves, 1 small piece of ginger, and 1 star anise in 1 cup of boiling water for 7–10 minutes. Strain and cool. Use chilled concentrate in the cocktail (about 2 oz required).

Fill a mixing glass or shaker with ice.

Add 2 oz Bulleit Bourbon to the mixing glass.

Pour in 2 oz chai concentrate (chilled).

Add 1 oz fresh apple cider for brightness and body.

Add 0.5 oz fresh lemon juice to balance sweetness and highlight spices.

Add 0.5 oz simple syrup. If your chai or cider is very sweet, reduce to 0.25 oz.

Add 0.25 oz allspice dram (or a small dash of allspice bitters) for warm spice depth.

Add 2 dashes of aromatic bitters to round and harmonize flavors.

Stir the mixture vigorously with a bar spoon for 20–30 seconds to chill and dilute slightly (recommended if served on the rocks). If you prefer a shaken, slightly frothier texture, shake vigorously in a cocktail shaker for 10–12 seconds and double-strain into the glass over fresh ice.

Place a large ice cube or two into an old-fashioned (rocks) glass.

Strain the chilled cocktail into the prepared glass over the ice.

Garnish with a thin apple slice and a cinnamon stick. Lightly grate a touch of nutmeg over the top, if desired.

Serve immediately. Stir once or twice while drinking to re-integrate flavors as the ice melts.
