Muddle
Place the fresh raspberries and simple syrup into a cocktail shaker. Gently muddle until raspberries are mostly broken down and fragrant (about 8–10 gentle presses).
Add base ingredients
Add the pine liqueur, fresh lemon juice, and egg white (if using) into the shaker with the muddled raspberries.
Dry shake
Seal the shaker and shake vigorously without ice for 12–15 seconds to emulsify the egg white and incorporate the fruit into a frothy mix.
Wet shake
Add a generous handful of ice cubes to the shaker and shake again vigorously for 12–15 seconds until cold and slightly dilutes (shake until the exterior of the shaker is very cold).
Double strain
Double-strain the cocktail into a chilled Collins or highball glass filled halfway with fresh ice using a fine mesh strainer to remove raspberry seeds and solids.
