Rinse the rice

Place 2 cups glutinous rice in a large bowl. Fill with cold water, swirl with your hand, and drain. Repeat 3–4 times until the rinse water is mostly clear. This removes surface starch and prevents gummy clumps.

Soak

After rinsing, add about 2 cups warm water (enough to cover) to the rice and let it soak at room temperature for at least 4 hours or up to overnight. For best texture, soak 6–8 hours. If short on time, soak at least 1–2 hours; the rice will be chewier.

Steaming & Serving

Prepare steamer

Fill the bottom of a large pot or steamer with about 6 cups of water, making sure the water level sits below the steaming basket. Bring water to a gentle simmer. If using a bamboo steamer, line the basket with banana leaf or a layer of cheesecloth to prevent grains falling through and sticking.

Drain rice

Drain the soaked rice thoroughly in a fine-mesh sieve for 5 minutes to remove excess water. Lightly shake to distribute rice evenly in the steamer basket.

Steam the rice

Spread the drained rice in an even layer (about 1–1.5 inches deep) on the lined steamer basket. Cover with a tight-fitting lid (or wrap with a damp towel then lid) and steam over simmering water for 20 minutes. After 20 minutes, remove the lid, gently fluff and turn the rice with a silicone spatula or wooden spoon to expose underlayer, then re-cover and steam another 10–15 minutes, until the grains are translucent and tender but still chewy. Total steaming time: 30–35 minutes depending on quantity and steamer.

Finish & season

Immediately transfer steamed rice to a mixing bowl. Sprinkle 1 tsp salt over the hot rice and gently fold to distribute (for neutral/savory sticky rice). If serving sweet sticky rice, mix warmed coconut milk with 2 tbsp sugar until dissolved and gently fold into the hot rice to coat; let sit 10 minutes to absorb. Cover with a clean towel to keep warm for serving.

Rest

Let the rice rest, covered, for 5–10 minutes so moisture evens out and texture firms slightly. Fluff once more before serving.

Serve

Serve warm. For sweet preparations, garnish with toasted sesame seed, toasted mung beans, or toasted coconut. For savory uses (with grilled meats or sticky rice balls), serve plain or lightly salted.

Optional Finishing (Coconut Sauce)

Make sweet coconut sauce (optional)

Warm 1 cup coconut milk in a small saucepan over low heat — do not boil. Stir in 2 tbsp sugar and a pinch of salt until dissolved. Taste and adjust sweetness. Pour a few tablespoons over a portion of hot sticky rice when serving and garnish as desired.
