Prepare syrup and infuse zest

In a small saucepan, combine sugar and water. Bring to a gentle simmer over medium heat, stirring until the sugar is fully dissolved. Add orange zest and simmer for 2 minutes to infuse. Remove from heat and let the syrup cool to room temperature.

Juice and balance

Juice the blood oranges to yield 2 cups of juice. Stir in fresh lemon juice and salt. Strain the juice through a fine-mesh sieve if you prefer a smoother sorbet, discarding pulp.

Combine base

Whisk the cooled syrup into the blood orange juice. If using orange liqueur, stir it in now. Taste and adjust sweetness or acidity by adding a bit more juice or a touch more sugar dissolved in hot water if needed.

Chill

Chill the sorbet base in the refrigerator until completely cold, at least 2 hours (preferably 4 hours).

Churn and firm

Churn the base in an ice cream maker according to the manufacturer’s instructions until thick and smooth. Transfer to a freezer-safe container and freeze for at least 2 hours to achieve scoopable texture.
