Prepare glass

Chill a coupe or Martini glass by filling it with ice water while you prepare the cocktail.

Combine ingredients

In a mixing glass, add 2 oz Bar Moro gin, 0.5 oz fresh lemon juice, 0.25 oz fresh lime juice, 0.25 oz dry vermouth, 0.25 oz olive brine, 0.25 oz simple syrup, and one fresh herb sprig.

Add ice and stir

Fill the mixing glass with cubed ice (about 6 cubes). Stir gently for 20–30 seconds until the mixture is well chilled and slightly diluted.

Rinse (optional)

If you prefer a stronger olive accent, pour out the ice water from the chilled glass and add a small splash (about 0.1 oz) of olive brine, swirl to coat the inside, then discard excess. This step is optional; otherwise proceed to strain.

Strain

Double-strain the stirred cocktail into the chilled coupe or Martini glass using a Hawthorne and fine mesh strainer to remove herb bits and small ice shards.

Garnish & Finish

Express the lemon twist over the surface of the cocktail to release oils, then rub the twist around the rim and drop it into the drink.

Skewer the pitted green olive (and optionally the herb sprig) on a cocktail pick and rest it on the rim or lay it in the drink. If you used an herb sprig in the mixing glass, use a fresh sprig for the garnish.

Serve immediately. The cocktail should present a bright citrus nose balanced by herbal notes and a subtle savory olive finish.
