Prepare glass
Run a lime wedge around the rim of a chilled rocks or coupe glass. Spread the coarse salt on a small plate and gently press the glass rim into the salt to coat about half to three-quarters of the rim. Set the glass aside.
Mix
Fill a cocktail shaker about two-thirds full with ice. Add 2 oz blanco tequila, 1 oz triple sec, 1 oz fresh lime juice, and 0.5 oz simple syrup (or 1.5 oz sweet & sour mix in place of lime + syrup if preferred).
Shake
Secure the shaker lid and shake vigorously for 10–15 seconds, until the shaker is well-chilled and slightly frosted.
Strain
Strain the cocktail into the prepared glass over fresh ice (for a rocks serving) or without ice (for a straight-up/coupe serving). Use a fine strainer if you prefer to catch small ice shards and pulp.
Garnish & serve
Garnish with a lime wheel or wedge on the rim. Serve immediately.
