Preparation

1

Preheat the Oven

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

2

Mix Dry Ingredients

In a large mixing bowl, combine the gluten-free flour, baking powder, baking soda, cinnamon, salt, and coconut sugar. Whisk together until well combined.

3

Mix Wet Ingredients

In another bowl, combine the applesauce, almond milk, vegetable oil, and vanilla extract. Stir until the mixture is smooth.

Combining Mixtures

4

Combine Wet and Dry

Pour the wet ingredients into the dry ingredients. Stir gently until just combined; be careful not to overmix.

5

Fold in Apples and Walnuts

Gently fold in the chopped apples and walnuts (if using) into the batter until evenly distributed.

Baking

6

Fill Muffin Tin

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

7

Bake

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

8

Cool and Serve

Remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then transfer to a wire rack to cool completely before serving.
