Preparation

Prepare the Pork

Rinse the pork short ribs under cold water and pat them dry with paper towels. Season the ribs with salt and black pepper evenly on all sides.

Prepare the Garlic

Peel and finely mince the garlic cloves.

Prepare the Marinade

In a bowl, combine the fish sauce, brown sugar, soy sauce, rice vinegar, and minced garlic. Stir until the sugar is dissolved.

Marinate the Ribs

Place the seasoned short ribs in a resealable plastic bag or a shallow dish. Pour the marinade over the ribs, ensuring they are well coated. Add the lime leaves to the bag/dish, seal or cover, and marinate in the refrigerator for at least 1 hour, preferably overnight.

Sear the Ribs

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Remove the ribs from the marinade (reserve marinade) and sear them in the hot oil until browned on all sides, about 5-7 minutes.

Simmer

Once the ribs are browned, add the reserved marinade and water to the pot. Bring to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the ribs are tender and easily pull apart with a fork.

Serve

Once cooked, remove the ribs from the pot and let them rest for a few minutes before serving. You can serve them with the cooking liquid drizzled over the top or as a dipping sauce.
