Combine base ingredients

Add 2 cups of unsweetened soy (or coconut) yogurt and 1 cup chilled plant-based milk to a high-speed blender. This creates the creamy base; use thicker yogurt for a richer texture.

Add 3 tablespoons maple syrup (adjust 1–2 tablespoons more or less to taste). Maple provides a neutral, vegan-friendly sweetness that blends smoothly with the yogurt.

Add citrus, spice, and salt

Add 2 teaspoons freshly squeezed lime juice, 1 teaspoon ground cardamom, and a pinch of salt to the blender. The lime brightens the flavor, cardamom gives aromatic warmth, and salt enhances overall taste.

Optional Fruit & Garnish

For plain lassi: add ice

If making a classic plain lassi, add about 1 cup ice cubes to the blender for a chilled, slightly frothy drink. Blend until smooth and slightly frothy, about 30–45 seconds on high.

For mango lassi: add fruit and ice

If making a mango lassi, add 1 cup diced ripe mango and 1/2 cup ice cubes to the blender (reduce ice so mango flavor remains prominent). Blend until completely smooth, about 45–60 seconds.

Taste and adjust

Taste and adjust sweetness, lime, or cardamom as desired. If too thick, add up to 1/4 cup more plant milk and pulse to incorporate.

Serve and garnish

Pour lassi into chilled glasses. Garnish with 2 teaspoons toasted chopped pistachios and 2 fresh mint leaves per glass (or a light dusting of ground cardamom). Serve immediately.
