Prepare coffee base

If you don't have chilled concentrated cold-brew or espresso ready, brew 2 shots (~60 ml) of espresso, cool to room temperature and chill quickly in the freezer for 5–10 minutes. For best results use 1 cup of cold-brew concentrate or 1 cup of strong chilled espresso diluted slightly with 2–3 tbs water so it measures 1 cup.

Combine base ingredients

In a cocktail shaker add the chilled coffee base (1 cup), chicory coffee concentrate (2 tbs) if using, coffee syrup (3 tbs), dandelion or chicory brew (1 tbs) if using, 1 tsp vanilla extract and 1/2 tsp coffee tincture or extract (optional). The syrup quantity assumes medium sweetness; adjust to taste.

Add ice and shake

Fill the shaker with 2 cups of ice cubes, secure the lid and shake vigorously for 20–30 seconds. Aim for a hard, fast shake so the mixture chills rapidly and becomes slightly frothy before adding the aquafaba foam.

Whip aquafaba

While you finish the coffee shake, measure 6 tbs chilled aquafaba into a clean bowl. Using an electric hand mixer or whisk, beat the aquafaba on medium-high speed until foamy, then add 2 tsp granulated sugar and 1/4 tsp vanilla extract. Continue to whip until soft peaks form (about 2–4 minutes). If you prefer a richer foam, fold in 2 tbs cold whipping-cream substitute and whisk briefly to combine; do not overwhip.

Double-strain coffee

Open the cocktail shaker and quickly double-strain the chilled coffee mixture into two chilled martini or coupe glasses, filling each about 3/4 full (reserve room for foam). Double-straining removes small ice shards for a smoother drink.

Top with aquafaba foam

Divide the whipped aquafaba evenly between the two glasses, spooning it gently on top of the coffee so it forms a distinct creamy layer. The foam should sit above the coffee like a classic espresso martini head.

Garnish and finish

Garnish each glass with three coffee beans or a couple of shaved dark chocolate pieces arranged on the foam. Lightly dust with a pinch (about 1/4 tsp divided) of grated nutmeg or cocoa powder if desired. Serve immediately.
