Prepare the Marinade

In a medium bowl, whisk together olive oil, lemon juice, minced garlic, chopped rosemary, red pepper flakes, black pepper, and salt until well combined.

Marinate the Chicken

Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, or overnight for more flavor.

Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F).

Prepare the Vegetables

While the grill is heating, toss the sliced bell peppers, red onion, and zucchini in a bowl with a drizzle of olive oil, salt, and pepper to taste.

Grill the Chicken

Remove the chicken from the marinade and place it on the grill. Cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is browned and cooked through.

Grill the Vegetables

Place the seasoned vegetables on the grill (you can use a grill basket for easier handling). Grill for about 8-10 minutes, turning occasionally, until they are tender and slightly charred.

Once everything is grilled, remove from heat. Let the chicken rest for a few minutes before slicing. Serve the sliced chicken on a platter with the grilled vegetables and garnish with chopped cilantro.
