Preparation

Preheat the Oven

Preheat your oven to 375°F (190°C).

Prepare the Filling

In a large bowl, mix the shredded cooked chicken, black beans, chopped onions, chopped bell peppers, and chopped cilantro until well combined.

Fill the Tortillas

Take a corn tortilla and place about 2-3 tablespoons of the filling mixture in the center. Roll the tortilla tightly around the filling and place it seam-side down in a greased baking dish. Repeat with the remaining tortillas and filling.

Add Sauce

Pour the enchilada sauce evenly over the rolled tortillas in the baking dish. Make sure to cover them completely with sauce.

Add Cheese

Sprinkle the shredded cheese evenly over the top of the enchiladas.

Bake

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Serve

Remove from the oven and let cool for a few minutes. Serve hot, topped with sour cream, sliced jalapeños, and chopped green onions as desired.
