Toast and grind sesame

In a dry skillet over medium heat, toast the black sesame seeds, shaking the pan often, until they become fragrant and begin to pop, about 3–4 minutes. Remove from heat and let cool slightly. Transfer seeds to a spice grinder or high-speed blender and grind until you have a smooth paste or as smooth as possible (a few gritty bits are fine). Add 1 tablespoon neutral oil while blending to help create a cohesive black sesame paste. Set aside.

Warm milk and cream

In a medium saucepan, combine whole milk and heavy cream. Warm over medium heat until the mixture is steaming and small bubbles form around the edges (do not boil), about 5–7 minutes.

Temper the egg yolks

In a heatproof bowl, whisk the egg yolks with the granulated sugar until pale and slightly thickened. Gradually ladle about 1 cup of the hot milk-cream mixture into the yolks while whisking constantly to temper them (this prevents scrambling).

Cook custard

Return the tempered yolk mixture to the saucepan with the remaining milk-cream. Cook over low to medium-low heat, stirring constantly with a heatproof spatula, until the custard thickens and coats the back of the spatula (an instant-read thermometer should read 175–180°F / 80–82°C). Do not boil.

Combine with sesame paste

Remove the custard from heat. Stir in the prepared black sesame paste, fine sea salt, and vanilla extract until fully incorporated and smooth. If you prefer an ultra-smooth texture, pass the mixture through a fine-mesh sieve into a clean bowl to remove any coarse particles.

Chill the base

Cover the bowl with plastic wrap, pressing the wrap directly onto the surface to prevent a skin from forming. Chill the custard thoroughly in the refrigerator until very cold, at least 4 hours or overnight.

Churn

Once chilled, churn the custard in an ice cream maker according to the manufacturer's instructions until it reaches soft-serve thickness, usually 20–30 minutes.

Harden

Transfer the churned ice cream to a freezer-safe container, smooth the top, press a piece of parchment directly on the surface (optional) and freeze until firm, at least 4 hours.

Optional Garnish / Serving

When serving, scoop the black sesame ice cream into bowls or cones. Sprinkle with toasted sesame seeds, crushed sesame brittle or toasted almonds for texture, and finish with a tiny pinch of flaky sea salt if desired.
