Strawberry Sauce
Prepare strawberries
Hull and quarter 2 cups of fresh strawberries. Reserve about 6–8 small halved berries for garnish if desired.
Place the quartered strawberries, 3 tablespoons granulated sugar, 1 teaspoon lemon juice, and 2 tablespoons water in a small saucepan over medium heat.
Bring mixture to a gentle simmer, stirring occasionally. Cook 6–8 minutes until strawberries soften and release juices and the sugar dissolves.
Remove from heat and let cool to room temperature, then chill in refrigerator at least 20 minutes to set slightly. Reserve about 3 tablespoons of the sauce for drizzling at assembly.
Cream Base
Chill a mixing bowl and beaters in the freezer for 10 minutes — this helps the cream whip faster.
In the chilled bowl, beat 1.5 cups of heavy whipping cream with an electric mixer on medium speed until soft peaks form (about 2–3 minutes).
Fold one-third of the whipped cream gently into the mascarpone mixture to lighten it, then fold in the remaining whipped cream until homogeneous and airy. Taste and adjust sweetness with up to 1 tablespoon more powdered sugar if desired.
Keep the cream chilled until ready to assemble.
Assembly & Garnish
Spoon a tablespoon of chilled strawberry sauce into the bottom of 4 serving glasses or bowls (makes about 4 servings).
Add a layer of the strawberry-sliced halves (about 1–2 tablespoons) over the sauce.
Pipe or spoon about 1/4 cup of the mascarpone cream over the strawberries to form the next layer.
Repeat with another thin layer of strawberry sauce (about 1–2 tablespoons) and a second layer of cream if desired, finishing with cream on top.
Drizzle reserved strawberry sauce over the top, arrange a few sliced fresh strawberries, and sprinkle 2 tablespoons toasted almond flakes or graham cracker crumbs if using.
Garnish each serving with a mint leaf. Chill assembled glasses for at least 15 minutes before serving so flavors meld.
Serve cold. Leftovers can be stored covered in the refrigerator for up to 24 hours (cream may loosen slightly; stir gently before serving).
