Preparation of Chocolate Lava Cake

Preheat the Oven

Preheat your oven to 425°F (220°C) and grease four ramekins with butter, then dust with cocoa powder to prevent sticking.

Melt Chocolate and Butter

In a microwave-safe bowl, combine the bittersweet chocolate and unsalted butter. Microwave in short bursts of 20 seconds, stirring in between until fully melted and smooth.

Mix Sugar and Eggs

In a separate mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolk until light and fluffy, about 3-4 minutes.

Combine Mixtures

Pour the melted chocolate mixture into the egg mixture. Add the vanilla extract and salt, and gently fold until combined.

Add Flour

Sift the all-purpose flour into the batter and fold gently until just combined, being careful not to overmix.

Pour into Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

Rest and Serve

Remove from the oven and let sit for 1 minute. Carefully invert each ramekin onto a plate. Serve warm with a scoop of vanilla ice cream, dusted with powdered sugar and topped with fresh berries if desired.
