Marinate the Chicken

In a bowl, mix the olive oil, minced garlic, chopped rosemary, juice of the lemon, salt, and pepper. Add the chicken thighs and coat them well in the marinade. Cover and refrigerate for at least 30 minutes.

Cook the Chicken

Preheat your oven to 400°F (200°C). Place the marinated chicken thighs on a baking sheet. Bake in the preheated oven for about 30-35 minutes, or until the internal temperature reaches 165°F (75°C).

Prepare the Rice

In a saucepan, combine the basmati rice and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the rice is fluffy and broth is absorbed.

Sauté the Vegetables

In a skillet, heat a tablespoon of olive oil over medium heat. Add mixed vegetables and sauté for about 5-7 minutes until tender. Season with salt and pepper to taste.

Plate the Dish

Once the chicken is cooked, remove it from the oven. On each plate, serve a portion of basmati rice, a serving of sautéed vegetables, and top with a chicken thigh. Garnish with additional rosemary if desired.
