Prepare the Tortillas
Cut each corn tortilla into 8 equal triangles to form chips.
Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Chips
Carefully add the tortilla triangles to the hot oil in batches, frying them until they are golden brown and crispy, about 2-3 minutes per batch.
Drain the Chips
Use a slotted spoon to remove the chips from the oil and place them on a plate lined with paper towels to drain excess oil. Sprinkle with salt while still hot.
Salsa
Mix the Salsa
In a mixing bowl, combine the diced tomatoes, red onion, cilantro, and jalapeño pepper.
Add Lime and Salt
Pour in the lime juice and sprinkle with salt. Mix well to combine all ingredients.
Taste and Adjust
Taste the salsa and adjust salt or lime juice if necessary. Let it sit for at least 15 minutes for flavors to meld.
