Prepare the Chorizo

In a skillet over medium heat, remove the casing from the chorizo sausage. Add the chorizo to the skillet and cook, breaking it up with a spatula, until it's browned and fully cooked (about 5-7 minutes). Drain any excess fat and set it aside.

Mix the Cheese

In a large mixing bowl, combine the Oaxaca cheese, Monterey Jack cheese, and cream cheese. Mix thoroughly until well blended.

Combine and Melt

Preheat your oven to 350°F (175°C). In an oven-safe dish, layer the cheese mixture evenly at the bottom. Top with the cooked chorizo. Place the dish in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.

Garnish and Serve

Once the queso fundido is out of the oven, sprinkle the chopped cilantro, diced jalapeños, and chopped green onions on top. Serve immediately with tortilla chips for dipping.
