Make simple caramel-colored syrup

In a small heavy saucepan, combine 1.5 cups granulated sugar and 1 cup water. Heat gently over medium, stirring until sugar dissolves. Once dissolved, stop stirring and bring to a simmer. If using homemade caramel color: in a separate small dry skillet melt 2 tbs granulated sugar over medium heat until it turns a deep amber (watch carefully to avoid burning). Immediately whisk the caramelized sugar into the syrup to achieve the characteristic cola color. Stir in 1 tsp dark molasses. Reduce heat and simmer gently 3–4 minutes to combine. Remove from heat and set aside.

Prepare flavor steep

In a small saucepan, combine 0.5 cups water with the lime zest, orange zest, 1 tsp cassia/cinnamon, 1 tsp coriander seeds, 1/2 star anise, 1 tsp dried bitter orange peel, and 1 tsp thinly sliced fresh ginger. Bring to a gentle simmer, then remove from heat and let steep, covered, for 20 minutes to extract oils and aromatics.

Strain and combine flavorings

After steeping, strain the infused liquid through a fine mesh sieve or cheesecloth, pressing solids to extract as much liquid as possible. Discard solids. Stir the strained concentrate into the warm syrup base. Add 1 tsp vanilla extract (or seeds from 1/4 vanilla bean), 1/2 tsp citric acid, and optional 0.1 tsp caffeine powder if using; whisk until fully dissolved and evenly incorporated. Taste and adjust: add up to 1/4 tsp more citric acid for brightness or a touch more molasses for depth, in small increments.

Cool the combined syrup to room temperature, then chill in the refrigerator until cold (at least 1 hour). The resulting syrup is a concentrated cola flavor.

Finishing & Bottling

Dilute and carbonate

When ready to serve, cold-chill 6 cups of club soda. For a standard serving ratio start by combining 1 part cola syrup to 5–7 parts carbonated water depending on desired strength. For the quantities above, use about 1 cup (240 ml) of the cola syrup to 6 cups (1440 ml) club soda to yield a balanced cola (adjust to taste). Gently pour the chilled syrup into a large pitcher, then slowly add the cold club soda to preserve fizz. Stir gently once to combine.

Bottle or serve

To bottle: funnel the mixed cola into clean glass bottles or swing-top bottles, leaving 1/2 inch headspace, cap, and keep refrigerated. If you prefer to keep a syrup concentrate: transfer the concentrated syrup (not diluted) into sterilized bottles and refrigerate; when serving mix syrup with carbonated water at the desired ratio. Serve over ice with fresh lime wedges if desired.

Storage: Refrigerated syrup keeps up to 2 weeks. Bottled mixed cola keeps 2–3 days best when kept very cold and sealed; carbonation will slowly dissipate.
