Method

Prepare rim
Pour the coarse salt (or sugar, or mixture with chili salt/Tajín) onto a small plate. Rub a lime wedge around the rim of a chilled rocks or coupe glass, then dip the rim into the salt to coat evenly. Set glass aside.
Make fruit purée or muddle
If using fresh fruit whole, place about 1/3 cup chopped fruit (strawberry, mango, or peach) into a shaker and muddle until smooth. Alternatively, use 1 ounce prepared purée.
Build and shake
Add blanco tequila (2 oz), fresh lime juice (1 oz), orange liqueur (1 oz), simple syrup (0.5 oz), and the fruit purée or muddled fruit (1 oz) into a cocktail shaker. Fill the shaker with about 1 cup of ice. Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker is frosty and well chilled.
Strain and serve
Double-strain the cocktail into the prepared glass over fresh ice if desired (or serve neat in coupe). Use a fine mesh strainer to remove pulp and seeds for a smooth texture. Garnish with a lime wheel or wedge. If you like, dust a pinch of chili salt on top.
Piña Colada (fruit variation)
Prepare fruits and equipment
If using fresh pineapple or other fruit, cut into chunks. Chill a hurricane or highball glass. Measure out cream of coconut and pineapple juice.
Blend
In a blender add white rum (2 oz), cream of coconut (2 oz), fresh pineapple juice (2 oz), fresh or frozen fruit (1 cup), fresh lime juice (0.5 oz), and 1.5 cups of ice. Blend on high for 30–60 seconds until smooth and creamy. If too thick, add 1–2 tablespoons pineapple juice and pulse again; if too thin, add a few more ice cubes and blend briefly.
Taste and adjust
Taste the mixture and adjust sweetness or acidity as needed—add up to 0.5 oz simple syrup for more sweetness or another 0.25 oz lime juice for more brightness. Blend briefly to incorporate adjustments.
Serve
Pour the piña colada into the chilled glass. Optionally float 0.25 oz dark rum on top by pouring it slowly over the back of a spoon. Garnish with a pineapple wedge and/or maraschino cherry. Serve with a straw.
