Prepare ingredients
Measure the white rum, coconut cream, pineapple juice, and simple syrup. Cut a fresh pineapple wedge and set aside a leaf if using for garnish.
Blend
In a blender add 1 cup crushed ice, 1 cup fresh pineapple chunks, 3 oz pineapple juice, 1 oz coconut cream, 2 oz white rum, and 0.5 oz simple syrup. Secure the lid.
Pulse then blend
Pulse 2–3 times to break up larger ice and pineapple, then blend on high for 10–20 seconds until smooth and creamy. If mixture is too thick, add 0.5 oz more pineapple juice and blend 5–10 seconds more. If too thin, add a few more ice cubes and blend briefly.
Glass prep & serve
Pour the blended pina colada into a chilled hurricane or highball glass. If desired, fill the glass with a few additional crushed ice before pouring to keep it cold.
Garnish & finish
Garnish the rim with a pineapple wedge, thread a maraschino cherry onto a pick and rest on the wedge, and tuck a pineapple leaf into the wedge for visual appeal. Lightly grate a pinch of fresh nutmeg over the top to finish (optional). Serve immediately with a straw.
