Method
Dough
Activate and combine
In the bowl of a stand mixer (or a large bowl), whisk together 2 cups of the flour, the instant yeast, sugar, and salt. In a separate bowl or measuring cup, combine warm water (about 105–115°F / 40–46°C), milk, melted butter, and the large egg; whisk briefly to combine.
Mix into a shaggy dough
With the mixer fitted with the dough hook on low speed (or using a wooden spoon), pour the wet ingredients into the dry and mix until a shaggy dough forms. Add the remaining flour 1/2 cup at a time as needed until the dough pulls away from the sides but is still slightly tacky — you may not need all remaining flour.
Knead
Knead on medium speed for 6–8 minutes (or by hand on a lightly floured surface for 8–10 minutes) until the dough is smooth, elastic, and slightly sticky. The dough should pass the windowpane test or hold its shape when stretched.
First rise
Lightly oil a large bowl, place the dough inside, cover with plastic wrap or a damp towel, and let rise in a warm draft-free place until doubled in size, about 60–90 minutes depending on room temperature.

While the dough is rising, toast the walnuts in a dry skillet over medium heat for 4–6 minutes, stirring frequently, until fragrant and lightly browned. Remove from heat and coarsely chop. Zest one orange and measure dried cranberries.
Incorporate mix-ins
After the dough has doubled, turn it out onto a lightly floured surface and gently deflate. Roll or press the dough into a rough rectangle about 10x12 inches. Evenly scatter the dried cranberries, toasted chopped walnuts, and orange zest over the dough. Fold the dough over the filling and gently knead 6–8 turns until the fruit and nuts are evenly distributed without overworking the dough (so you don't crush berries).
Shape for loaf
Shape the dough into a tight loaf by folding edges under to form surface tension. Place seam-side down into a lightly greased 9x5-inch loaf pan (or shape as a free-form boule and place on a parchment-lined baking sheet).
Second rise
Cover the shaped loaf lightly with plastic wrap or a towel and let rise until puffy and nearly doubled, about 45–60 minutes. If using a boule, proof until the dough jigs slightly and springs back slowly.
Baking & finishing
Preheat oven
Preheat the oven to 375°F (190°C) with a rack in the center position. If baking a boule, place a shallow pan on the lower rack to create steam for the first 10 minutes (optional).
Bake
Bake the loaf for 35–42 minutes for a 9x5 loaf (or 28–35 minutes for a smaller free-form boule) until the crust is deep golden brown and the internal temperature reaches 195–205°F (90–96°C). If the top browns too quickly, tent loosely with foil for the last 10 minutes.
Cool briefly
Remove the bread from the oven and transfer to a wire rack. Let rest for 15–20 minutes in the pan (or on the rack) before removing. This short rest helps the crumb set while still warm — the loaf is ideal served warm.

Make whipped butter
While the bread rests, combine softened unsalted butter, powdered sugar, honey, salt, and optional orange zest in a small bowl. Beat with a hand mixer or whisk until light and airy, about 1–2 minutes. Taste and adjust salt or honey as needed.
